Ingredients

  • 1 cup all-natural plain yoghurt
  • 2 tbsp mild or medium curry powder, depending on your tastes
  • 1 bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 large boneless and skinless chicken breasts, cut into bite-sized chunks
  • 1 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  • In a large frying pan, heat up ½ tbsp. olive oil. When it is warmed, add the chicken and cook until done.
  • Remove the chicken and place on a paper towel to soak up any excess oil.
  • Add the remaining ½ tbsp. of olive oil to the pan. Place the bell pepper and onion into the pan and cook for about 5 minutes, until the onions are slightly translucent.
  • Add the chicken back into the pan and sprinkle the curry powder over the chicken and vegetables. Cook for another 2 minutes.
  • Add the yoghurt to the chicken and vegetables and stir until it has coated everything and become a bit loose with the heat.
  • Serve over boiled rice and enjoy!

Precautions

Depending on your tastes, you may want to add more or less curry powder. All good chefs tastes as they go, so add a little curry powder at first, taste the sauce, and see if you want to up the spice level!
